Peach Crumb Bars

For the crumb crust and topping:

  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup (230 grams) cold butter cubed
  • 1 large egg lightly beaten
  • 3 cups (375 grams) all-purpose flour (spooned & leveled)
  • 1/2 cup (100 grams) brown sugar
  • 1/2 cup (100 grams) granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

For the peach filling:

  • 5 cups (800 grams) chopped peaches
  • 1/2 cup (100 grams) granulated sugar
  • 3 tablespoons (27 grams) cornstarch
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon ground cinnamon

For the crumb crust and topping:

  1. Preheat oven to 350°F. Line a 9×13 pan with parchment paper or aluminum foil, leaving some overhang for easy removal, and set aside.
  2. In a large mixing bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, cinnamon, nutmeg, and salt. Add the cold cubed butter and cut it in with a pastry cutter until the mixture is crumbly and starts to come together. Add the egg and stir it in until fully combined (you may also use the pastry cutter to help blend it in).
