Mozzarella Stuffed Meatballs (low carb, keto)
Quick and easy family meal for cheese stuffed meatballs, it’s perfect for your low carb or keto diet.
- 0.5 lb Lean ground beef
- 0.5 tsp ground black pepper
- 1 egg
- 1 lb Lean ground pork
- 1 tbsp fresh parsley , finely chopped
- 1 tbsps Italian Seasoning
- 1 tsp salt
- 12 oz mozzarella cheese , cut into small cubes
- 1 tbsp olive oil
- 14 oz crushed tomatoes, canned
- 1 bay leaf
- 1 clove garlic , chopped
- 1 tbsp fresh parsley, or basil , finely chopped
- 1 tsp black pepper
- 1/2 small onion , finely chopped
- Add the olive oil to a pan over a medium heat.
- Then add the chopped onion and saute for five minutes.
