Keto/Low Carb Caprese Stuffed Chicken Roll Ups
- cooking Spray
- 6 Toothpicks
- 6 Fresh Basil Leaves
- 6 Thin Sliced Chicken Breasts, boneless
- 6 slices Fresh Mozzarella Cheese
- 6 slices Plum Tomato
- 2 tbsp. Aged Balsamic Vinegar
- Kosher Salt & Black Pepper, to taste
- Preheat your oven to 425 degrees F; then spray a little cooking spray in the bottom of a 1qt. baking dish.
- Assemble the chicken roll ups by first placing a slice of cheese on top of the chicken, then add the tomato slice and a whole basil leaf. Roll up the chicken, secure with a toothpick and place seam side down in the baking dish. Repeat for all pieces of chicken.
